It’s said that a candy maker from Kentucky created these no bake delights in the early 20th century. Make your own batch with nuts, cocoa, wafers and of course lots and lots of bourbon. They stay best refrigerated. Here’s how to make them:
200 g vanilla wafers
1/2 cup roasted unsalted almonds
180 g semisweet chocolate chips
2 tbsp. heavy cream
1/2 cup granulated sugar
1 cup of bourbon
Finely chopped pistachios, almonds, or pecans
- In a food processor, pulse the vanilla wafers and almonds to make fine crumbs.
- Place the chocolate and cream in a medium microwave-safe bowl and heat on high, stirring every 30 seconds, until the chocolate is melted and smooth, about 1.5 minutes in total.
- Stir in the sugar, then the almond, cookie crumbs and bourbon. Immediately roll the mixture into 1.5inch balls, then coat in the nuts. Refrigerate until ready to serve.
